Alder Planked Chinook Salmon

Here is a simple, full flavored bbq’d salmon dish – Alder Planked Chinook Salmon with roasted Fingerling Potatoes and grilled Broccolini.

The salmon – this fillet was from my trip to the San Juan’s in July. It doesn’t get much easier than this, bring your grill up to 375 degrees and let the alder plank heat up. Once you see some smoke, place the fillet that is seasoned with olive oil, Sea Salt and fresh cracked pepper on the plank and cooked till medium rare. Remove from the grill and loosely cover with foil to rest.

Roasted fingerling potatoes – coat the potatoes with olive oil, Kosher salt, cracked pepper and garlic powder. Roast at 425 degrees till fork tender then add sliced garlic and scallions to the pan. Caution, the garlic will cook quickly and overcooked garlic takes on a bitter taste. These fingerling potatoes have so much flavor you won’t even need butter or sour cream, promise.

Grilled Broccolini – season with truffle oil, champagne vinegar and Kosher salt. Grill over medium heat for 3 minutes
