Ling Cod Fish Tacos Family Style

I started by marinating the Ling Cod fillets in Olive Oil, lime juice, garlic and tequila. I only marinated this for about 30 minutes as I didn’t want the acidity to start ‘cooking’ the fish. To go with this, we made an avocado salad with fresh corn off the cob, red and yellow peppers, Teas Honey, Champagne Vinegar, Creole Mustard and seasoned with kosher salt and fresh cracked black pepper. Garnish with lime wedges and sour cream mixed with chives.

Only thing left, invite a few friends over and serve with your favorite chilled beverage!

Wahoo Sashimi with an Avocado slaw – the only thing required to prepare this dish is a sharp knife!!

When something is this fresh, less is truly more. I made a simple sauce by mixing olive oil, soy sauce, lime juice, green onions and Serrano chilies. I let the sauce sit for about 30 minutes to allow the flavors to meld. I placed a thin layer of sauce down on the serving dish then placed the thinly sliced Wahoo on top of the sauce. For best results, you need to share with great friends and a cold cerveza!
