– 4 cups dark brown sugar
– 1 cup non-iodized salt (canning & pickling or kosher salt)
– 10-15 cloves of garlic

So you’re asking, “How much fish will this recipe handle?” Well, that depends on how heavily you cover your fish. If you need more dry brine, just quickly mix up another partial batch.
